Mujair Nyat Nyat Kintamani, A Spicy Dish With Traditional Balinese Spices.

Bali has its own characteristics in terms of food processing. All selected spices will determine the flavor of every menu. If you like culinary tours, there’s one traditional food that shouldn’t be missed: Mujair Nyat Nyat. While enjoying the natural view of Kintamani, this wonderful dish could complete the atmosphere.

Mujair is the name of a fish, which won’t taste good if processed without the expertise and special seasonings. Well, Bali has its own solution for processing freshwater fish like Mujair. Due to its special processing, the food is called “Nyat Nyat”, which derived from the word ‘receding’ or ‘shrinking’. The word is a symbol of the soil taste that is shrinking to decrease due to the processing. In addition, the method of processing is also cooked until the spices shrink and are fully absorbed into the meat.

Before cooking with a complete spice or base genep, the fish is cleaned then fried or baked to medium has done. After being processed half-cooked without seasoning, we prepare various spices such as ginger, galangal, kencur, and turmeric. The cayenne pepper and red chilies also will give off a distinctively spicy taste, coupled with enough onion and garlic. A pinch of shrimp paste is also included to glow the savory taste.

The whole seasoning is still incomplete, you know. Cloves, black pepper, white pepper, nutmeg, tabia bun, candlenut, jangu, bangle, and incense will give off a pleasant aroma. These spices are called base wangen that shrink the soil aroma of tilapia fish. Base wangen is mixed until smooth, while the base genep is chopped roughly.

After all the seasonings are ready, let’s heat the oil on the frying pan. After that, you can put base genep as the first seasoning, then followed by base wangen, and mixed with lemon grass, orange leaves, bay leaves, salt, and a little sugar.
